1 1/2 cups heavy cream

4 large egg yolks

1/4 cup grated Parmesan cheese

1/4 cup grated Gruyère cheese

1/4 cup grated sharp cheddar cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

Pinch of nutmeg

Extra grated cheese for topping

4 teaspoons granulated sugar (for caramelizing)

Instructions:

Step 1: Preheat your oven to 325°F (163°C)

Step 2: Heat the cream in a saucepan over medium heat until it begins to boil, then remove from the pan and let cool for 15 minutes.

Step 3: In a medium bowl, whisk together the egg yolks Parmesan cheese, Gruyère cheese, cheddar cheese, salt, pepper, and nutmeg until well combined

Step 4: Slowly pour the warm cream into the egg mixture, whisking constantly, until smooth and combined.

Step 5: To ensure that it gets rid of any lumps, strain the mixture into a fresh bowl using a fine-mesh sieve.

Step 6: With caution, fill the baking dish with boiling water until it reaches halfway up the edges of the ramekins before placing it in the oven.

Step 7: Bake for about 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

Step 8: Remove the ramekins from the water bath and let them cool to room temperature. Then, cover and refrigerate for at least 2 hours, or overnight, to chill and set completely.

Step 9: Before serving, sprinkle a thin, even layer of extra grated cheese over the top of each custard. Sprinkle about a teaspoon of granulated sugar evenly over the cheese.

Step 10: Caramelize the sugar using a kitchen torch until it is melted and golden brown. Allow the sugar to harden for a few minutes before serving.
